Ingredients

• ½ cup unsalted butter

• ½ cup granulated sugar

• ½ brown sugar

• 1 ½ teaspoon vanilla extract

• 1 large egg

• ½ cup pumpkin puree

• 1 ¾ cup flour

• ¼ teaspoon salt

• 1 teaspoon baking soda

• 1 teaspoon pumpkin pie spice

• 1 teaspoon cinnamon

• 1 cup milk chocolate chips

Directions

1. Preheat the oven to 350 degrees fahrenheit and line two baking sheets with parchment paper or a silicon baking mat.

2. In a large bowl, beat unsalted butter and both sugars until light and fluffy. Then mix in vanilla, egg, and pumpkin puree.

3. In a medium bowl whisk flour, salt, baking soda, pumpkin pie spice, and cinnamon.

4. Mix the dry ingredients into the wet ones and once fully combined add in chocolate chips.

5. Using a ¼ - cup, scoop the cookies onto the lined baking sheet about 2 inches apart to leave room to bake.

6. Bake at 350 degrees fahrenheit for 10-12 minutes.
