Ginger Snap Cookies

Prep time 1 hour and 15 minutes

Bake time 10-12 minutes

Makes 24 cookies

Ingredients

  • ¾ cup softened butter

  • 1 cup and 2 teaspoons granulated sugar 

  • ¼ cup molasses

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 2 cups flour

  • 2  teaspoon baking soda

  • ¼ teaspoon salt

  • 1  teaspoon ground cinnamon

  • 1 ½  teaspoons ground ginger

  • ¼ teaspoon ground nutmeg 

Directions

  1. In a large bowl beat butter and sugar until fully combined. Then mix in molasses, egg, and vanilla. Set aside.

  2. In a medium bowl sift the flour,  baking  soda,  salt, ground cinnamon, ground ginger, and ground nutmeg.

  3. Using a hand mixer mix the dry ingredients into the wet ones. Once combined, refrigerate for at least 1 hour and at most 3 days.

  4. Preheat your oven to 350 degrees Fahrenheit and prepare 2 baking sheets with parchment paper or a silicone baking sheet. 

  5. Take dough out of the fridge, Using a ¼ - cup, scoop the cookies onto the lined baking sheet about 2 inches apart to leave room to bake.

  6. Bake at 350 degrees Fahrenheit for 10-12 minutes. Let cool before eating and Enjoy!
